Everyday new cases of cancer show up in people of all ages. I don’t understand why a cure was not found it. There are so many people researching and it seems that the cure never arrive.

Some people are caught by surprise, one day they are fine the other date they found out they have cancer. Some cases like Mesothelioma are associated to asbestos but other types of cancer just happen out of nowhere,

There so many types of cancer and the cases are increasing everyday, I just think more should be done to find a cure.

Spinach with Chiles

4 servings
Time: 20 minutes

A simple, flavorful preparation that can be cooked slowly or quickly, with or without liquid (see the variation).

Ingredients
2 tablespoons peanut or neutral oil, like grapeseed or corn
2 dried red chiles, or to taste
5 cloves garlic, peeled, or to taste
1 pound spinach, well washed, large stems removed
Salt and freshly ground black pepper
Other vegetables you can use: almost any greens, chopped, though most will take a little longer to cook.

Instructions
1. Put the oil in a large skillet or casserole over medium heat. When hot, add the chiles and garlic and cook until they sizzle, just 30 seconds or so.

2. Raise the heat to medium-high, then stir in the spinach and about 1/4 cup water (or stock). Cook, stirring occasionally, until the spinach wilts and is tender, about 10 minutes. Sprinkle with salt and pepper and serve hot or warm.

Variations
Spinach with Chiles and Coconut Milk: Like spicy, vegan creamed spinach, nice with a teaspoon of curry powder, added with the chiles and garlic: Step 1 remains the same. In Step 2, use 1 cup coconut milk in place of the water. Cook slowly for about 30 minutes, stirring occasionally, until the spinach is very soft and tender and the liquid almost evaporated.

I don’t believe people are already talking about Halloween again. Times fly and I don’t even notice it.

Costumes are becoming very popular around here. There are special parties, private parties and parties in general where people just gather to have fun.

My son, of course, wants a vampire costume. The Twilight Saga is a big influence in the life of big and teen kids.  The vampires are a mystic character that awakens the kid’s curiosity. The fascination for immortality, for flying and running at a high speed are features they all dream of.

My daughter is kind of in a side world. She likes the vampire character, the whole vampire idea but she’s afraid of the vampires. If she saw a boy wearing a vampire costume she would collapse for sure.

Well, regarding myself, the vampire idea is kind of attractive, but I’m not planning to search for adult halloween costumes.I’m sure there will be a lot of vampires out there on Halloween but I won’t be one of them.

Monday it will be the first day of school. There is still a lot of school material to buy for my daughter but some of it can only be bought after the teacher gives a list mentioning the material she wants. My son is already able to buy some upfront material and the rest will be bought after school starts.

This week I want to organize my son’s room so that he has all the school material near him and teach him some rules he must follow. He is very disorganized, untidy and I have to put some order on his room and special on the school related things.

ALSO Home gave me a few ideas for his room. I’m going to buy some seagrass or bamboo baskets where I will organized his video games, remote controls, battery chargers, and other stuff he has without a specific location. His books will be shelved, pencils and pens will have a special container and another container will hold the eraser, sharpener, clippers, and other small material. I’m going to label all the containers in order to make my point that everything has the right place.

I really hope my son improves his organization and take good care of his material.

I attended my cousin’s wedding yesterday and we had a great time. We met family that is living abroad and came especially for the wedding, we had friendly conversation and good food. Today we went to my aunt’s house to have lunch (with the wedding leftovers) and to spend the afternoon.

The recent married couple is leaving Friday for their honeymoon and there they go to a hot, tropical weather destination: Acapulco. They are thrilled to go there and enjoy the tropical paradise.

Today, while we were chatting after lunch we discussed possible vacation destinations and we ended up with several possible options. While some people prefer the tropical destinations, some prefer to explore remote areas of some country including ours of course.

There are so many unexplored areas that can be a dream destination but usually we don’t even get to hear about them. Have you ever thought about going on vacations for the Himalayas?
